Ingredients:
- 4–5 medium-sized potatoes (aalu)
- 1 medium onion (pyaj)
- 2–3 green chilies (optional)
- 2 tbsp mustard oil (sarson ka tel) or any cooking oil
- ½ tsp turmeric powder (haldi)
- Salt to taste
- ½ tsp red chili powder (optional)
- Fresh coriander leaves for garnish

How to Make Aalu Ki Sabji – (Aalu Ki Sabji Banane Ki Vidhi)
Short Note : Aalu ki sabji banane ke liye pahle hamen aalu ko chhilkar use kaatna hoga uske bad use dhokar sarson ke Tel mein jira mirch halka golden karna hoga uske bad pyaj dalkar usko halka golden karna hoga uske bad haldi namak dalkar aalu dal dena uske bad ham usko pakaayenge fir aalu ki bhujiya taiyar hai
Step 1: Aalu Ko Prepare Karein
- Aalu ko chhil kar chhote cubes mein kaat lein.
- Dhoke side mein rakh dein.
Step 2: Tel Garam Karein & Tempering
- Pan mein tel garam karein.
- Agar chahen toh thoda jeera daal sakte hain aur halkasa bhun lein.
- Hari mirch daalein aur thodi der fry karein.
Step 3: Pyaj Ko Sauté Karein
- Kati hui pyaj pan mein daalein.
- Pyaj ko halka golden brown hone tak bhune.
Step 4: Masale & Aalu Daalein
- Haldi, namak aur lal mirch powder daalein, achhi tarah mix karein.
- Cut kiye hue aalu daalein aur masalon ke saath achhi tarah mix karein.
Step 5: Aalu Ko Pakayein
- Pan ko dhak kar medium heat par pakayein, beech-beech mein hilaate rahein.
- Zarurat ho toh thoda paani daal sakte hain.
- 10–15 minute tak pakayein jab tak aalu soft ho jayein.
Step 6: Garnish & Serve Karein
- Pakne ke baad upar se hara dhaniya sprinkle karein.
- Garam garam roti, chapati ya chawal ke saath serve karein.
Tips:
- Aalu ko zyada mat pakayein, thoda firm rehna chahiye.
- Sarson ka tel traditional taste deta hai, par koi bhi oil use kar sakte hain.
- Hari mirch aur lal mirch apne taste ke according adjust karein.
